Tasting Note
Deep purple-black; intense black-plum, cassis and violet aromas with truffle, black tea and licorice; full-bodied, silky yet firm silt-like tannins, mineral-savoury core and a very long, layered finish.
Food Pairing
Western: roast lamb, braised short ribs, duck confit, aged hard cheeses. Asian: Peking duck, Korean BBQ (bulgogi), char siu pork, mushroom and soy stir-fries.
Production Method
Hand-harvested; fermented in temperature-controlled vats with extended maceration; aged ~18 months in French oak (≈65% new).
