Tasting Note
Concentrated, plush red and black fruits (plum, blackberry, blueberry) with truffle, violets, spice, tobacco and subtle licorice. Ultra-fine yet building tannins, vibrant minerality and a long, layered finish.
Food Pairing
Western: roast lamb, braised beef short ribs, venison, mushroom risotto, aged hard cheeses. Asian: Peking duck, Cantonese red-cooked pork, Korean BBQ (galbi), soy-braised beef, shiitake-and-miso dishes.
Production Method
Temp-controlled fermentation (oak vats ~28°C), élevage 18–22 months in French oak (substantial new oak component); careful plot selection for the grand vin.
