Tasting Note

Deep ruby with black cherry, plum, cedar, truffle and spice aromas. Concentrated, ripe dark-fruit palate with tobacco and cedar from oak, firm ripe tannins and a savory, persistent finish.

Roast lamb, braised beef short ribs, truffle risotto; Western: steak, game birds, aged cheeses. Asian: Peking duck, char siu, soy-braised beef, mushroom stir-fries.


Production Method

Hand-harvested; traditional fermentation on skins in temperature-controlled vats; aged approximately 15–18 months in French oak barrels (portion new).
