Tasting Note
Bright ruby red; aromas of wild cherry, blackberry, violet and spice. Fresh, lively acidity with soft-grippy tannins, medium body, slight frizzante sparkle and a persistent, savory finish.
Food Pairing
Western: salumi, roasted pork, lamb stew, grilled pork, aged cheeses. Asian: char siu, Korean BBQ, spicy Szechuan pork dishes, yakitori, ramen with pork broth.
Production Method
Partial whole-cluster cold maceration, stainless fermentation, malolactic and aging in old wooden containers (~1 year). Ancestral-style refermentation in bottle using frozen must (remuage).
