Tasting Note
Dark blackberry and blackcurrant with plum, violet and spicy cedar; hints of tobacco and chocolate. Medium‑full, rounded and layered, with ripe fruit, firm tannins and a medium‑long savory finish.
Food Pairing
Western: grilled ribeye or roast lamb, beef stew, aged hard cheeses (Comté/Pecorino). Asian: Peking/roast duck, char siu (Cantonese BBQ pork), Korean bulgogi, spicy Szechuan beef or beef rendang.
Production Method
Hand‑harvested with rigorous sorting, ~3‑week maceration with pump‑overs; malolactic in vats; matured ~12 months in oak (c.15% new).
Vineyard Info
Second wine of Château Haut‑Batailley (5ème Cru 1855); managed by the Cazes family since 2017. Verso is drawn largely from younger vines and selected lots.
