Tasting Note
Dark ruby color; fresh acidity and silky tannins. Flavors of raspberry coulis, Bing cherry, redcurrant, pomegranate, leather, dried porcini, truffle and sweet tobacco, finishing long with savory black olive and forest-floor notes.
Food Pairing
Western: roast lamb, beef tenderloin, duck confit, mushroom risotto, aged cheddar or comté. Asian: Peking duck, soy-glazed short ribs, char siu, braised beef with shiitake, rich umami mushroom dishes.
