Tasting Note
Perfumed ripe plum and black cherry, violet blossom, new leather, cocoa and sanguine mineral notes. Powdery tannins, bright acidity and layered spice lead to a very long, complex finish.

Western: grilled ribeye, rack of lamb, cassoulet, aged Manchego or Parmesan. Asian: Korean BBQ (bulgogi), Peking duck, char siu, braised beef with hoisin or soy-based sauces.

Production Method
Sourced from multiple Sonoma micro‑crus; fermented as a Bordeaux-style blend and aged ~16 months in 100% new French oak.
