Tasting Note
Aromas of cassis, redcurrant, lavender and baking spice. Palate shows blackberry, dried blackcurrant, raspberry compote, pine needle, bay leaf and wet gravel. Elegant yet powerful with fine-grained tannins, bright acidity and a long spicy finish.
Food Pairing
Western: grilled ribeye, roast lamb, venison, braised short ribs, aged hard cheeses. Asian: Korean BBQ (bulgogi/galbi), Peking duck, Szechuan beef, Cantonese roast pork, miso-glazed eggplant.
Production Method
Estate-sourced lots underwent extended maceration and fermentation, then aged roughly 16–18 months in predominantly new French oak barrels before blending and bottling.
