Tasting Note
Dense blackcurrant, ripe cherry and damson plum with mint, sage and lavender notes. Earthy crushed-stone minerality, unsmoked cigar and wild blueberry layers; very fine-grained tannins and a brooding, long finish.
Food Pairing
Western: grilled ribeye, roast lamb, venison, braised short ribs, aged cheddar. Asian: Korean BBQ (galbi, bulgogi), Cantonese char siu, beef rendang, Peking duck, umami-rich mushroom ramen.
Production Method
Micro-cru lots harvested separately, fermented individually and aged ~15–18 months in French oak (high % new), then blended and bottled unfiltered for long-term aging.
