Tasting Note
Bright citrus and white-flower aromas with notes of preserved lemon, grapefruit, toasted almond and brioche; crisp, saline minerality, fresh acidity and a focused, slightly creamy mid-palate with a long, mineral finish.
Food Pairing
Western: sole meunière, beurre blanc, seafood platter, grilled prawns, roasted chicken. Asian: sushi/sashimi, tempura, miso-glazed fish, Vietnamese spring rolls, light Thai coconut or lemongrass dishes.
Production Method
Hand-harvested; first-press juices only. Alcoholic and malolactic fermentations in oak barrels, aged in barrels with limited bâtonnage; small proportion (~10%) new oak used.
