Tasting Note
Pear, white peach and citrus oil with toasted nuts, brioche and white flowers over chalky minerality; creamy mid‑palate, bright acidity, subtle spice and a long, mineral finish.

Western: roast chicken, lobster with beurre blanc, seared scallops, creamy pasta, goat cheese. Asian: miso‑glazed black cod, tempura prawns, sushi (salmon/tuna), steamed fish with ginger & scallions, soy‑ginger glazed scallops.
Production Method
Hand-harvested fruit vinified parcel-by-parcel; fermentations in barrel and large horizontal tanks; 7 months élevage in oak with 25% new barrels and regular bâtonnage; parcels blended for final cuvée.
