Tasting Note
Fresh pear, white peach and lemon zest with toasted hazelnut and subtle spice; creamy mid-palate, bright saline minerality and a citrus-tinged, lingering finish.

Western: roast chicken, grilled salmon, creamy pasta, mushroom risotto, Comté or aged goat cheeses. Asian: miso-glazed fish, steamed white fish with ginger & scallion, tempura, sushi/sashimi, yakitori.
Production Method
Made from Mâconnais Chardonnay; fermented and aged in oak (c.15–20% new) with 6–8 months élevage on fine lees and light bâtonnage; minimal intervention vinification.
