Tasting Note
Fresh pear, white flowers, hazelnut and baked-bread aromas with peach, Golden Delicious and a touch of orange pith. Medium-bodied, satiny and saline, with a lively citrus-acid backbone, lemongrass hints and a long, mineral-driven finish.
Food Pairing
Western: oysters, scallops, grilled lobster, poached or grilled white fish, roast chicken, pork with apple, creamy risotto. Asian: sushi/sashimi, steamed miso-glazed fish, tempura, lightly spiced Thai or Vietnamese seafood dishes.
Production Method
Chardonnay from old vines; only free-run juice. Fermented and aged in oak (foudres/barrels), ~25% new oak, 5–8 months élevage with occasional bâtonnage; minimal intervention.
Vineyard Info
Verget is Jean‑Marie Guffens‑Heynen’s négociant project in the Mâconnais. Fruit comes from older, low-yield plots near Vergisson/Bussières; limited-production, quality-focused bottling.
