Pure, chalky minerality with lime, grapefruit and white flowers; hints of smoke, peach‑skin and honey. Precise, saline palate with bright acidity and a concentrated, long mineral finish.

Western: oysters, lobster, grilled or poached salmon, asparagus with smoked salmon, Comté cheese. Asian: sushi/sashimi, steamed white fish, tempura, miso‑glazed fish, light Chinese seafood dishes.


Production Method

Hand‑harvested fruit; alcoholic fermentation in barrels (≈10% new), malolactic in barrel; 7 months on fine lees with bâtonnage, then ~6 months in horizontal stainless tanks.
