Tasting Note
Deep ruby with black cherry, cassis and bramble; peppery spice, licorice and smoked‑meat notes. Soft ripe tannins, juicy mid‑palate and a long, spicy finish.

Western: grilled lamb, beef stew, venison, braised short ribs, BBQ brisket. Asian: Korean BBQ (bulgogi), char siu, spicy Sichuan beef, Cantonese roasted meats, rich Thai or Malaysian red curries.
Production Method
Hand‑harvested, destemmed (≈15% stems returned), 24h cold soak at ~8°C, fermented ~26°C with 21‑day maceration, malolactic in stainless steel, matured ~15 months in French oak (≈25% new).

Grapes from Vergelegen’s Rooiland vineyards (north/northwest slopes), planted 1999 and virus‑free; historic Vergelegen estate (founded 1700) in Somerset West, Stellenbosch. Winemaking led historically by André van Rensburg; recent stewardship continued by the estate team.
