Tasting Note
Dense blackcurrant and plum core with dried rose, forest-floor and nori; cedar, dark chocolate and mint notes. Fine powdery tannins, bright acidity and a long mineral-tinged finish.

Food Pairing
Grilled ribeye, roast lamb, mushroom risotto, aged cheddar; Korean BBQ, char siu, miso-glazed eggplant, soy-braised beef, shiitake and nori-based dishes.

Production Method
Wild-yeast fermentation; Cabernet static-fermented, Malbec/Petit Verdot open-fermented; up to 30 days on skins. Aged 19 months in French barriques (80% new). Full malolactic; egg-white fined.
