Tasting Note
Ruby with a brick tint. Savoury, exotic nose of red-berry jam, sour cherry, nori, sage and teak. Palate shows plum, blackcurrant, clove and black tea, fine powdery tannins, fresh tangy length and a persistent savoury finish.

Food Pairing
Roast lamb, beef ribeye, venison, aged cheddar, mushroom risotto; Asian pairings: Korean BBQ (bulgogi), char siu, Peking duck, spicy Szechuan beef, grilled shiitake with soy.

Production Method
Hand-harvested, destemmed only; natural yeast fermentation using open and static ferments, extended maceration up to ~34 days; basket-pressed and matured 16–18 months in French oak (≈51–59% new).
