Tasting Note
Fine, pale lemon Blanc de Blancs with citrus, crunchy Granny Smith apple, yellow plum and golden kiwi, layered with brioche, oyster-shell minerality and wet stone. Delicate sea-foam mousse, bright acidity and a long chalky, saline finish.

Fresh seafood (oysters, scallops, abalone), sashimi/sushi, tempura, steamed fish, lemon-roast chicken, light creamy pasta, Vietnamese spring rolls, delicate Asian shellfish dishes.

Production Method
Made méthode traditionnelle from premium free-run Chardonnay; 21+ months on lees, partial maturation in French oak (33%); disgorged with ~5g/L dosage.
