Tasting Note
Complex nose of flint, lemon custard, champignon and seaside minerality. Palate shows taut citrus acidity, grapefruit, clotted cream, ginger and lime leaf, with fine phenolic texture and a long, savory finish.
Food Pairing
Western: butter-poached lobster, roast chicken with mushroom cream sauce, pork belly, creamy pasta, aged cheeses. Asian: miso-glazed black cod, soy-glazed salmon, tempura prawns, seared scallops with ginger-lime, mild Thai green curry (cream-based).
Production Method
Hand-harvested; whole-bunch pressed; wild (natural) yeast fermentation; partial malolactic fermentation. Aged 9 months in French oak barriques (52% new), 7 months on lees in tank, then filtered and bottled.

Vasse Felix, founded 1967 by Dr Tom Cullity, is Margaret River's founding estate. Long-established vineyards and winemaker Virginia Willcock produce site-driven Chardonnay using sustainable/organic practices across select Heytesbury blocks.
