Tasting Note
Bright citrus and white stone-fruit (grapefruit, white nectarine, grilled peach) with beeswax, wet stone, saline minerality and savory notes (curry leaf, enoki). Creamy texture, taut acidity and a long, dry, savory finish.
Food Pairing
Western: roast chicken with lemon-butter, butter-poached lobster, creamy mushroom risotto, grilled scallops, soft triple-cream cheeses. Asian: miso-glazed black cod, delicate sushi/ sashimi (white fish), enoki/mushroom dishes, lightly spiced Thai fishcakes, tempura prawns.
Production Method
Hand-harvested whole-bunch pressing, wild-yeast fermentation in French oak barriques (c.62% new), 10 months in barrel then tank maturation; natural malolactic fermentation allowed to complete.
