Tasting Note
Pale straw with green hues. Bright citrus (lemon/lime, grapefruit), white peach and yellow stone fruits, flinty/wet-stone minerality, beeswax and subtle toasted oak; creamy texture, taut acidity and a long saline, savory finish.
Food Pairing
Western: roast chicken, butter-poached lobster, creamy pasta, grilled pork belly. Asian: miso-glazed salmon, soy-glazed scallops, tempura prawns, mildly spiced Thai/Chinese dishes (coconut-cream or ginger-based).
Production Method
Hand-harvested whole-bunch pressing; native (wild) yeast fermentation in French oak barriques (≈42% new), partial malolactic, ~9 months aging with some bâtonnage.
