Tasting Note
Pale straw with white peach, grapefruit, struck-match and nougat. Palate shows lemon freshness, stone-fruit power, citrus tart and sweet crust, with fine oak toast, bright acidity and a long, drying, saline finish.

Grilled lobster, scallops with spring onion & ginger, creamy seafood pasta, roast chicken with lemon and thyme, miso-glazed cod, sashimi or sushi (rich tuna), tempura prawns, mild curry with coconut.
Production Method
Hand‑harvested, gently whole‑bunch pressed. Juice fermented wild in French oak barriques and matured on lees with bâtonnage for nine months; natural malolactic fermentation completed. Aged ~9 months in 57% new French oak.
