Tasting Note
Deep vibrant red. Perfumed blackcurrant and red currant with jarrah forest, leather and cured-meat notes. Juicy red/blueberry core, ultra-fine but firm tannins, bright acid lift and a long finish of dark chocolate, eucalyptus and liquor cherries.
Food Pairing
Western: roast lamb, grilled ribeye, beef short ribs, aged cheddar. Asian: Peking duck, Korean BBQ (bulgogi), Sichuan pepper beef, char siu pork, hoisin-glazed duck.
Production Method
Small parcels fermented on skins, transferred to French oak barriques; matured 18 months (77% new, 23% older) before selection and bottling.
