Tasting Note
Bright pale straw. Citrus blossom, white nectarine, preserved lemon, jasmine and pineapple with toasted cashew, subtle flint and saline minerality. Fresh, textural palate with chalky fine finish.

Western: oysters, shellfish, grilled chicken, roast pork, soft cheeses. Asian: sashimi, sushi, tempura, miso-glazed fish, lightly spiced Thai or Vietnamese dishes.
Production Method
100% Chardonnay; whole-berry air-bag press, 100% wild/native fermentation in French oak barriques, lees-aged ~8 months, partial malolactic, 20% new oak (approx).
