Tasting Note
Bright lemon-citrus and stone-fruit aromas with shortbread, lemon meringue and saline minerality. Palate is tight and elegant with creamy texture, brisk acidity, nectarine, citrus rind and subtle oak spice; long dry, savoury finish.

Western: roast chicken with lemon & thyme, butter-poached lobster, creamy mushroom pasta, grilled salmon. Asian: miso-glazed cod, tempura prawns, ginger-scallion poached chicken, sashimi and soy-citrus dressed seafood.
Production Method
Hand-harvested; whole-bunch pressing; wild (indigenous) yeast fermentation; partial malolactic; matured 9 months in French oak barriques (28% new) with lees contact and occasional bâtonnage; filtered prior to bottling.

Founded 1967 by Dr Tom Cullity; Margaret River pioneer. Estate vineyards include Wilyabrup and Gnarawary; priority on Gingin clone Chardonnay and single-plot selection for premium expressions.
