Blackcurrant, blood plum, cassis, graphite, bay laurel and violet with cedar and dark chocolate notes; silky texture, bright acidity and fine powdery tannins, lingering savory finish.

Western: grilled ribeye, roast lamb, beef short ribs, mushroom risotto. Asian: Korean BBQ (bulgogi), char siu, beef rendang, braised Chinese beef, teriyaki beef.

Production Method
Wild‑yeast, whole‑berry ferments (roto fermenters), ~15 days on skins; matured in French oak barriques (majority 1–5 year old) for ~11–18 months. Bottled July 2023.
