Tasting Note
Fresh citrus and white stone-fruit with a buttery, leesy texture, herbal and mineral undertones, light toast from oak, complex and long with bright acidity and a saline finish.

Food Pairing
Western: oven-baked or grilled white fish, roast chicken, creamy seafood dishes, and soft/aged cheeses. Asian: sashimi/sushi, steamed fish with ginger & scallion, tempura vegetables, lightly spiced Thai or Vietnamese fish dishes.

Production Method
Hand-harvested single-vineyard field blend; first press decanted, fermented in 225/500L French oak (new and one-year) at cool temperatures, aged ~8–9 months with bâtonnage; best barrels selected and blended.
