Tasting Note
Deep mahogany. Intensely sweet with raisins, figs, molasses, toffee, dark chocolate and coffee notes; syrupy, velvety texture and a long, lingering treacly finish.
Food Pairing
Western: vanilla ice cream, crème brûlée, dark chocolate, blue cheeses, nutty desserts. Asian: mango sticky rice, mooncakes, Chinese red-bean dessert, sesame balls, hoisin- or soy-glazed duck.
Production Method
Grapes are sun-dried on esparto mats, partially fermented to low alcohol, then fortified to ~17% and aged oxidatively in a solera (American oak) for ~8–10 years.

Bodegas Valdespino, one of Jerez’s oldest houses, now owned by the Estévez family; they own extensive vineyards (incl. Macharnudo) and make traditional single‑vineyard and solera Sherries.
