Dry, full-bodied Oloroso with toasted almonds, hazelnuts, dark chocolate, espresso, cigar leaf and orange peel. Intensely nutty, smoky oak and dried-fruit notes, bright tangy acidity and a long, savory finish.
Food Pairing
Western: jamón ibérico, roasted lamb or duck, foie gras, blue cheeses, roasted nuts, dark chocolate. Asian: Peking duck, char siu (BBQ pork), miso-glazed fish or eggplant, soy-braised beef, rich Korean BBQ.
Production Method
Fermented from Palomino, fortified and aged oxidatively in American-oak botas using the solera system (average age >20 years); aged without flor to develop nutty, oxidative character.
