Tasting Note

Intense mahogany. Aromas of dried figs, dates, raisins, toasted almonds, caramel, dark chocolate and coffee. Smooth, full-bodied palate with toffee, roasted nuts and spice, balanced by tangy acidity and a long, bittersweet finish.


Food Pairing

Western: Roquefort or Stilton, mature cheeses, foie gras, dark chocolate, almond biscuits, jamón ibérico, roasted nuts, duck à l'orange. Asian: Cantonese roast pork (char siu), hoisin or five‑spice duck, Thai mango sticky rice, Malaysian kuih, rich/umami Chinese braises, spiced Szechuan dishes.


Production Method

Fermented in oak, fortified to ~20–21% ABV, then aged oxidatively in a solera system (solera established 1842). A small portion (≈8–10%) of Pedro Ximénez is blended in during ageing to add sweetness.

Bodegas Valdespino is a historic Jerez house; its Solera 1842 uses wines from Pago Carrascal/Macharnudo areas. The solera dates to 1842 and the finished wine is VOS (average age >20 years).
