Tasting Note

Bone-dry and saline with salted almond, green olive, chalk and sea-spray minerality. Pronounced flor/autolytic notes (sourdough, yeast), subtle citrus and a crisp, stony palate with a long, dry finish.


Food Pairing

Oysters and raw shellfish; sashimi/sushi and tempura; grilled sardines, calamari, paella; jamón ibérico, Marcona almonds, tapas; ceviche and light ceviche-style dishes; mildly spicy Thai or Chinese seafood.


Production Method

Fermented in 600L American oak butts with indigenous yeasts, fortified to ~15% and aged biologically under flor in a ten-criadera solera; bottled at an average age of ~10 years.

Bodegas Valdespino is a historic Jerez house owning the Macharnudo Alto pago; Inocente is their single-vineyard flagship, produced using traditional barrel fermentation and extended solera ageing.
