Tasting Note

Juicy black and red cherries, blackberry and raspberry with rose petal, candied orange and flinty minerality. Silky, fine tannins, subtle spice and nougat notes; saline, persistent finish.

Western: roast duck, charcuterie, mushroom risotto, roasted lamb, aged and goat cheeses. Asian: Peking duck, char siu, miso-glazed salmon, soy-ginger mushroom stir-fry.


Production Method

Hand-harvested biodynamic fruit; natural yeast fermentation in upright oak vats with pigeage and extended maceration; aged 12–18 months in French oak barrels/casks; bottled unfined and unfiltered.
