Tasting Note

Pale ruby; floral and red-berry core of wild raspberry, sour cherry and pomegranate, violet and spice notes, pronounced flinty minerality, bright acidity and fine silky tannins with a fresh, elegant finish.


Food Pairing

Western: roast duck, grilled lamb, pork tenderloin, charcuterie, mushroom risotto, aged goat or sheep cheeses. Asian: Peking duck, teriyaki salmon, char siu, Korean BBQ, shiitake dumplings, grilled mackerel with herbs.


Production Method

Hand-harvested, certified biodynamic farming; natural/indigenous yeast fermentation with gentle maceration; aged in foudres and older French oak, bottled unfined/unfiltered.


Vineyard Info

Family estate founded early 1900s; run by cousins Jean-Laurent and Jean-Dominique Vacheron; ~47–48 ha on flint and limestone soils; biodynamic since 2004.
