Tasting Note
Fresh, refined Pinot Noir: raspberry, strawberry, red cherry and pomegranate with orange-zest lift, peppery spice and flinty minerality; elegant, precise texture and a graceful finish.

Food Pairing
Western: roast/grilled chicken, pork, charcuterie, soft cheeses, mushroom risotto. Asian: teriyaki chicken, grilled salmon, mushroom stir-fry, Korean BBQ, char siu.

Production Method
Hand-harvested; indigenous-yeast fermentation in wooden vats and stainless/cement; aged in large foudres and older French oak, often bottled unfined/unfiltered. Estate uses organic/biodynamic practices.

Domaine Vacheron: a family estate founded early 1900s (Maurice Vacheron); today run by cousins Jean-Laurent and Jean-Dominique, known for old-vine plots on flint and limestone and biodynamic leadership in Sancerre.
