Tasting Note
Citrus and white-flower aromas with lime, orange blossom and stone-fruit hints; notable minerality and vibrant acidity; delicate, precise palate with a long, saline-tinged finish.

Food Pairing
Grilled fish, shellfish (oysters, clams), ceviche, sushi and sashimi, tempura, grilled chicken, salads, light pasta, Portuguese seafood dishes (bacalhau).

Production Method
Hand-harvested from old granite vines; gentle pressing and slow fermentation at low temperatures; matured ~10 months before bottling.
