Tasting Note
Citrus-yellow with exuberant floral aromatics and clear minerality. Bright citrus and stone-fruit flavors, crisp acidity, subtle oak spice and saline, long finish—precise, elegant and ageworthy.

Food Pairing
Oysters, sea urchin, grilled fish, seafood stews, white meats, truffle dishes, fresh cheeses; Asian: sashimi/sushi, steamed fish with ginger & scallions, Thai seafood curries, Chinese seafood stir-fries.

Production Method
Slow whole-bunch pressing; fermentation with indigenous yeasts at controlled temperatures in stainless steel; élevage in used French (Puligny) oak barrels and old concrete tanks.
