Tasting Note
Fine persistent mousse, aromas of pear, green apple, mandarin and brioche. Palate shows peach, citrus, toasted almond, light honey and chalky minerality; bright acidity and elegant medium body.

Western: oysters, caviar, smoked salmon, roasted chicken, creamy pasta, fried chicken, soft cheeses. Asian: sushi/sashimi, sashimi, tempura, dim sum, Peking duck, mild Thai dishes.

Production Method
Méthode traditionnelle (Champagne); blended from 50% Pinot Noir, 30% Chardonnay, 20% Meunier with up to 45% reserve wines; aged ~30–36 months on lees; Brut dosage ~9 g/L.
