Tasting Note
Deep copper-rose color. Complex nose of orange blossom, yuzu, mandarin, cherry, anise and brioche; palate shows saffron, peppery red fruit, toasted brioche and almond with lively acidity and a long finish.

Food Pairing
Western: seared salmon, roast chicken, duck à l'orange, charcuterie, creamy cheeses. Asian: sushi/sashimi, miso-glazed fish, spicy Thai or Indian curry, tajine-style monkfish with dates and orange peel.

Production Method
Méthode traditionnelle (Champagne); blend from Grands & Premiers Crus; ~10–11% base wines vinified/aged in large oak casks; ~13% red Bouzy Pinot Noir added; prolonged lees ageing; Brut dosage ~8 g/L.
