Tasting Note
Red and dark cherry, wild herb, red brick and schist notes leading to warm, succulent, tightly packed palate with elegant texture, soft tannins and persistent, generous finish.

Food Pairing
Roast duck, lamb, mushroom risotto, grilled salmon; Asian: Peking duck, char siu, teriyaki or miso-glazed salmon, mushroom ramen, Korean BBQ (bulgogi).

Production Method
Organically grown estate fruit from four vineyards; hand-harvested, small-batch fermentations, barrel selection aged in French oak barriques; low yields (<5 t/ha).
