Tasting Note

Dense black-plum and cassis core with truffle, iron/graphite, dark chocolate and violets; powerful, concentrated and backward in youth with firm, ripe tannins and long mineral finish.


Food Pairing

Western: roast lamb, braised beef short ribs, mushroom risotto, aged hard cheeses. Asian: Peking duck, Korean BBQ (galbi), char siu, braised beef rendang, shiitake mushroom hotpot.


Production Method

Fermented in small concrete vats with meticulous sorting; matured ~18 months in about 50% new oak. Rigorous vineyard work and manual harvests yield concentrated fruit.
