Tasting Note
Inky, concentrated Merlot-driven wine with black plum, cassis, blackberry, baking spices, cedar, lavender and graphite; velvety yet powerful, supported by firm grainy tannins and a long, spicy finish.

Western: roast lamb, beef ribeye, venison/game, aged hard cheeses. Asian: Peking duck, char siu, Korean BBQ short ribs, Sichuan braised beef, mushroom hotpot.
Production Method
Traditional vinification with cold pre-fermentation maceration, remontage/délestage and 21–35 day cuvaison; malolactic in barrels. Aged ~17 months in French oak (≈85% new).
