Tasting Note
Perfumed black and blue fruits with cracked white pepper, lavender and graphite; savory, smoky undertones, velvety tannins and a long, spicy finish. Elegant yet concentrated.

Food Pairing
Western: roast lamb, grilled steak, braised short ribs, game (venison); Asian: Korean barbecue, char siu, Sichuan pepper beef, hoisin-glazed duck, lamb kebabs.

Production Method
Hand-harvested parcels; ~30% whole-bunch fermentation with some Viognier skins; pumped-over/plunged; matured in predominantly new French oak barriques and large ovals; minimal fining and light filtration.
