Tasting Note
Perfumed aromas of ripe blackberry, raspberry, violet, Provençal herbs and black liquorice. Concentrated, silky palate with savory spice, refined tannins, bright acidity and a long, spicy mineral finish; will gain gamey/mineral complexity with age.

Grilled lamb, roast beef, venison, braised short ribs, mushroom risotto; Korean BBQ (bulgogi), char siu, Sichuan pepper beef, hoisin duck; aged cheeses.
Production Method
Hand-harvested parcels destemmed and fermented separately (some whole-bunch/Viognier-skin inclusion), matured 12–15 months in large French oak ovals/foudres, blended Dec 2022, bottled Feb 2023 with minimal fining/filtration.
