Tasting Note
Perfumed white peach, nectarine and citrus blossom with lime zest, toasted almond/cashew, flinty minerality and integrated spicy/toasty oak; fine acidity, medium‑full palate and a salivating, lingering finish.

Western: roast chicken with lemon & tarragon, butter‑poached lobster, grilled salmon, mushroom risotto. Asian: miso‑glazed black cod, tempura prawns, salmon/tuna sushi, teriyaki chicken, mild Thai green curry with seafood.
Production Method
Hand‑harvested fruit gently pressed; fermented with indigenous yeasts in 500L puncheons and some 228L barriques (c.37–46% new); malolactic encouraged; 11–14 months in oak then further months on lees; minimal filtration, no fining.
