Dry, powerful and precise: lime, green apple and white peach with white flowers, wet stone and subtle petrol. Razor acidity, intense saline minerality, concentrated mid‑palate and a very long, chalky finish.

Food Pairing

Western: oysters, scallops, lobster, grilled white fish, roast pork, Alsatian dishes (choucroute). Asian: sushi/sashimi, delicate sashimi, Vietnamese spring rolls, Thai green curry, lightly spicy Sichuan or Cantonese seafood dishes.

Production Method

Hand‑harvested from the 1.67 ha monopole; gentle pneumatic pressing, gravity transfer; fermented in temperature‑controlled stainless steel (~20°C); no malolactic, no oak; bottled after extended cellar ageing.
