Tasting Note
Pronounced aromas of yellow and exotic fruits, white flowers and subtle toasted oak. Rich, creamy and round on the palate with glyceric texture, lively acidity and mineral tension leading to a long, saline finish.
Food Pairing
Western: ceviche, roasted scallops, blanquette de veau, grilled white fish, lobster. Asian: gambas au lait de coco et citronnelle, Thai green curry, Vietnamese spring rolls, sushi/sashimi.
Production Method
Blended from three estates; Chardonnay from pressings in tank, Sémillon, Viognier and Roussanne fermented and aged partly in oak (≈25% new). Long fermentations and careful assemblage; bottled as Vin de France with screwcap.
