Tasting Note
Rich blackberry and black cherry core with bay leaf, Thai basil, coffee and dark chocolate notes; savory baking spices and crushed violets. Polished, firm tannins, vibrant acidity and an elegant, chewy finish.

Food Pairing
Western: grilled beef tenderloin, braised short ribs, venison, mushroom sauce, aged cheddar. Asian: pepper-crusted ahi tuna, Korean BBQ (bulgogi), char siu, hoisin-braised short ribs, shiitake mushroom stir-fries.

Production Method
Estate-grown fruit; fermented to dryness and blended. Aged ~18 months in French, American and Hungarian oak; limited yields and careful oak integration.
