Tasting Note
Ripe black cherry, cassis and plum with cedar, cocoa, black pepper and forest‑floor notes. Silky mid‑palate, concentrated fruit, firm polished tannins and a long, spicy finish.

Food Pairing
Western: grilled ribeye, roasted lamb, beef short ribs, mushroom sauce, aged cheddar. Asian: Korean BBQ (bulgogi), char siu or Cantonese roast pork, Peking duck, rich Sichuan beef dishes (tempered spice).

Production Method
Estate-grown fruit; traditional red vinification with fermentation on skins and 18 months aging in French oak (approx. 53% new); produced using sustainable farming practices.
