Tasting Note
Blueberry, plum and cassis with leather and molasses, dark chocolate, vanilla and toasty oak; velvety tannins, bright acidity and a long, spice-laced finish.

Food Pairing
Western: grilled steak, roast lamb, braised short ribs, aged cheddar. Asian: Korean BBQ, char siu/roast pork, spicy Sichuan beef, hoisin duck, teriyaki beef. Pairs well with smoked or caramelized dishes.

Production Method
Estate-grown from the Main Ranch; harvested Sept 20–Oct 18; fermented, blended and aged ~18 months in oak barrels before bottling.
