Tasting Note

Elegant floral aromatics from 'Princess Michiko' rose yeast, delicate rice sweetness, light citrus and white-flesh fruit notes, soft texture and crisp acidity with a clean, long finish.

Production Method

Junmai Daiginjo brewed from Yamada Nishiki polished to ~40%; fermented using yeast isolated from the 'Princess Michiko' rose (flower yeast) to produce floral ginjo aromatics; cold fermentation and careful temperature control.
